This is a simple tomato sauce that works well with our Beef meatballs or with plain pasta on nights when you need something quick.
4 - 6
3 tablespoons olive oil
1 medium onion, chopped
4 garlic doves, finely chopped
1 tablespoon dried mixed herbs
2 x 400g cans chopped tomatoes
Freshly ground black pepper
Heat the olive oil in a saucepan over a medium-high heat. Add the onion, garlic and mixed herbs, stirring occasionally until soft, about 2-3 minutes. Add the tomatoes and bring to the boil.
Turn down to simmer, stirring occasionally, until the sauce thickens, about 10-15 minutes.
Tip: This freezes well for up to 1 month in an airtight container. Allow to cool to room temperature before freezing.
Adapt this recipe for weaning
Serve with pasta and veg that have been cooked until soft and mashed to the right texture for your baby. Add some grated cheese and some strips of soft cooked chicken on the side. You can also serve this sauce cold as a dip for veggie sticks.
