This delicious green veg sauce is a quick, mid-week-meal saviour.
200g courgette (approximately 1)
½ tsp ground coriander
2 tsp olive oil
2 clove garlic
60g frozen peas (½ cup)
2 handful of spinach
60ml water (¼ cup)
30g cheese (feta or hard goat or cheddar)
Dice the courgette, garlic and roughly chop the spinach.
In a frying pan add the olive oil, garlic, coriander, courgette and cook for 2-3 minutes. Add the water, spinach and peas and cook until all water is absorbed and veg is soft.
Put into a blender with the cheese and blend until smooth.
You can serve this as a simple pasta sauce or spread on chicken or fish and bake.

"I've finally found a kids' food brand that Rudy and I genuinely love. I would never buy long-life toddler food that could be sitting on the shelf for up to 18 months - Little Dish meals are fresh and found in the fridge, plus they're nutritionist approved."
