A delicious breakfast recipe, especially during Christmas. Little ones will love dipping the bread into the eggy mixture.
2 medium free-range eggs
1 tablespoon milk
Pinch of ground cinnamon
Knob of butter
4 slices of bread (wholemeal, sourdough or fruit and nut bread all work well!)
Apple compote or maple syrup, to serve
Crack the eggs into a large bowl. Stir in the milk and beat with a fork. Add the cinnamon.
Place the butter in a large frying pan over a low heat.
Dip a slice of the bread into the egg mixture. Turn over the bread and dip again to make sure it's well covered with the egg mixture. Let the excess egg drip off the bread and then put straight into the frying pan. Repeat with the remaining slices of bread, adding more butter to the pan if needed.
Increase the heat to medium and cook each slice for 2 minutes on each side of until golden. Carefully remove from the pan and serve with apple compote or maple syrup.
