A quick and easy dessert for the family. Your little ones will love helping to fill the apples with dried fruit.
6 eating apples
Juice of 1 lemon
50g dried cranberries
1 tablespoon light muscovado sugar
0.5 teaspoon ground cinnamon
1 teaspoon Demerara sugar
Preheat the oven to 200C/gas mark 6.
Core the apples, using an apple corer or a sharp knife. Using a small knife, score a horizontal line along the middle of each apple. Squeeze lemon juice over the prepared apples to stop browning. Place the apples in a medium baking dish.
In a small bowl mix together the sultanas, dried cranberries, muscovado sugar and cinnamon. Push a little of the mixture into each apple. Dot the butter over the top of each apple and then sprinkle with Demerara sugar.
Bake the apples for 25 minutes or until they are cooked through.
