Green veg sauce recipe
This delicious green veg sauce is a quick, mid-week-meal saviour.
- 200g courgette (approximately 1)
- ½ tsp ground coriander
- 2 tsp olive oil
- 2 clove garlic
- 60g frozen peas (½ cup)
- 2 handful of spinach
- 60ml water (¼ cup)
- 30g cheese (feta or hard goat or cheddar)
Dice the courgette, garlic and roughly chop the spinach.
In a frying pan add the olive oil, garlic, coriander, courgette and cook for 2-3 minutes. Add the water, spinach and peas and cook until all water is absorbed and veg is soft.
Put into a blender with the cheese and blend until smooth.
You can serve this as a simple pasta sauce or spread on chicken or fish and bake.
