From making the meaty Bolognese, stirring the cheesy sauce to assembling the layers, this recipe is a classic for the whole family to enjoy. We add nutritious spinach to ours for one of your five a day.
- Meat sauce as per Turkey Bolognese recipe
- 60g unsalted butter
- 60g plain flour
- 1 litre milk
- 125g Cheddar cheese, grated
- Freshly ground black pepper
- Large pinch of grated nutmeg
- 8 sheets of lasagne
- 200g spinach
- 50g mozzarella cheese, grated
- 2 tablespoons grated Parmesan cheese
Preheat the oven to 180C/gas mark 4.
Follow the Turkey Bolognese recipe to make the meat sauce.
To make the cheese sauce, melt the butter in a saucepan over a medium heat and whisk in the flour until smooth, stirring continuously. Slowly whisk in the milk, stirring constantly. When all the milk has been added, bring to the boil, and continue to boil for 2 minutes, stirring constantly with a wooden spoon. Turn the sauce down to a simmer and cook until the sauce is thick and coats the back of the spoon. Stir in the cheese, season with black pepper and nutmeg.
To assemble the lasagne, spoon one third of the meat into the bottom of the baking dish. Top with half the lasagne sheets, another third of the meat, half the spinach, and half the cheese sauce. Add the remaining lasagne sheets then the rest of the meat, spinach and cheese sauce. Sprinkle the mozzarella and grated Parmesan cheese on top. Place the dish on a baking tray and bake for 45-55 minutes.
