Beefburger recipe with a surprise
Little ones can help form the meat mixture into patties and insert the mozzarella 'surprise'
- 1 courgette, grated and excess water squeezed out
- 500g lean minced beef
- 2 garlic cloves, finely chopped
- 1 teaspoon dried oregano
- 1 teaspoon sun-dried tomato puree
- 8 mini mozzarella balls or 125g mozzarella cut into 8 equal pieces
- Cold pressed sunflower oil for frying
- Salt and freshly ground black pepper (optional)
Place the courgette, beef, garlic, oregano and sun-dried tomato puree in a large bowl. Season and, using your hands, mix all the ingredients together to combine.
Divide the mixture into 8 even-sized balls and flatten with the palm of your hand. Place a mozzarella ball or piece in the middle of each patty and reshape the balls so the cheese is hidden in the middle of the burger.
Brush a large non-stick frying pan with oil and cook the burgers on a low heat for about 5 minutes on each side - cook in batches if they don't all fit m one pan.
Serve the burgers in mini buns, with lettuce, sliced tomatoes, red onion rings and slices of avocado.
