Apple, Mango & Passion Fruit Dessert

Deliciously sweet and rich in antioxidants, potassium and fibre, mango is the perfect fruit.

Serve with fresh strawberries and raspberries or just on it’s own as a welcome change to fromage frais or yoghurt.

Ingredients

  • 200g dessert apple (such as Gala or Fuji)
  • 60g fresh mango
  • 15ml sieved fresh passion fruit pulp
  • 20ml water

Here’s what you do

  1. Peel, wash and slice apples and put into pan with water. Bring to a boil and turn down to simmer on very low heat for 10 minutes or until apples are tender.
  2. Remove mango flesh from mango and put into blender with sieved passion fruit juice.
  3. Drain any excess water from apples when cooked and add to mango and passion fruit.
  4. Blend until pureé is completely smooth.

Makes 2 servings

Tip

  • Use hand blender to pureé so there’s less washing up.
