Apple, Mango & Passion Fruit Dessert

Deliciously sweet and rich in antioxidants, potassium and fibre, mango is the perfect fruit.
Serve with fresh strawberries and raspberries or just on it’s own as a welcome change to fromage frais or yoghurt.
Ingredients
- 200g dessert apple (such as Gala or Fuji)
- 60g fresh mango
- 15ml sieved fresh passion fruit pulp
- 20ml water
Here’s what you do
- Peel, wash and slice apples and put into pan with water. Bring to a boil and turn down to simmer on very low heat for 10 minutes or until apples are tender.
- Remove mango flesh from mango and put into blender with sieved passion fruit juice.
- Drain any excess water from apples when cooked and add to mango and passion fruit.
- Blend until pureé is completely smooth.
Makes 2 servings
Tip
- Use hand blender to pureé so there’s less washing up.
